Vegan Recipes...

...that will even make the meat-a-tarians in your life say, "yum"!

Living in Croatia has proven to be beneficial to us for the fact that we have been cooking a lot more at home, due to the lack of restaurants in and around our little village. We generally stock up on fruits and veggies at the local markets in neighboring villages a couple times a week and can purchase many of our "staples" at the market in Pisak. Although we are generally cooking with many of the same ingredients, night after night, we have been able to come up with some pretty fun (and healthy) creations.

Quinoa and Chickpea 100% Vegan Burger Patties

One of my first projects was to create a vegan burger. Most of the vegetarian burgers have cheese or egg in them in order to keep the patties together. Here is the process I used to create a 100% vegan patty!

Ingredients:

1 can of chickpeas and 1 can of lentils (or any two types of legumes you like)
1/2 sweet potato
1/3 green bell pepper
1/3 red bell pepper
1 clove of garlic
1/2 white onion
2 cups cooked quinoa
2 slices of lemon
2 Tbs apple cider vinegar
1 Tbs olive oil
Salt and pepper 

Process:

Chop up all of your yummy veggies
Pour veggies in a mixing bowl along with the legumes
Using a potato masher or fork, mix and mash until about half of the beans are mashed up
Add quinoa to the mixer and mix again
Add lemon, oil, and vinegar, lemon, salt and pepper to taste

Using your hands, create patties with the mixture and place in the oven. I made mine about a palm's width.

Bake at 375 degrees for about 20 minutes
Let cool for 10 minutes before serving


Add your vegan patty to your favorite bread, 
or make it a lettuce wrap for a low-carb dinner!
Topping suggestions: I tried peanut butter and my husband had his with sweet chili sauce. We loved both versions.



Quinoa, Chickpea, Cabbage Spring Rolls (with homemade Vietnamese-style peanut sauce)

I had leftover mixture from my vegan patties, so the next night we decided to make spring rolls. I made a fresh cabbage mixture to add to the quinoa/legume mixture, to give it a little crunch.

The first step was to blanch the cabbage. I tore off 8 cabbage leaves, keeping them in tact as much as possible. First, boil one leaf at a time for about 30 second to 1 minute, depending on the thickness. Take the leaf out of the boiling water and place in a bowl of ice water for about 30 second. Towel dry and place on a plate.

Cabbage mixture:

Chopped cabbage (about 4 leaves)
1 Shredded large carrot
1/2 cup chopped green onion
Handful of chopped cilantro
Lemon zest
2 tbs apple cider vinegar
1 tbs soy sauce
1 clove of garlic
Salt, pepper, and garlic powder

To prepare the rolls, lay one leaf flat on a plate. Take a spoonful of your quinoa/legume mixture (from the veggie patties) and place in the middle of the cabbage leaf. Add one spoonful of the fresh cabbage mixture. Roll and tuck the leaf to create a tight roll.

For sauce, we used some sweet chili sauce we had bought in town and I also made a homemade, Vietnamese style, peanut sauce.

Peanut sauce:
1 or 2 heaping spoonfuls of peanut butter
2 cloves crushed garlic to make a garlic paste
1 tsp soy sauce
Hot sauce or sriracha to taste
Water (thin to desired texture) 
Sesame oil if available


Quinoa Stuffed Bell Peppers

Stuffed peppers are always a favorite of mine. I can generally look through the pantry and fridge and find just enough yummy ingredients to make a delicious dinner. We had purchased some amazing red peppers at the market in Split this past Sunday, which were my inspiration for this dish.

Cut off the top of the pepper, removing the stem and seeds. Slice the bottom of the pepper in order to make a flat surface so the pepper can stand up in the oven.

Filling:

Quinoa
1/2 yellow pepper chopped
1/4 cup chopped green onion
2 chopped garlic cloves
1/2 can chickpeas
1/2 red onion chopped
1/2 zucchini chopped
Mix above together with olive oil, apple cider vinegar, and salt & pepper to taste

Fill each bell pepper cup with your delicious mixture and place in oven at 350 degrees for about 15-20 mins



Summer Cucumber Salad

No lettuce? No problem! A fresh and healthy chopped salad that made my meat-lovin' husband proclaim, "this may be my favorite salad ever"!

Ingredients:

1 cucumber
1/2 red onion
3 cabbage leaves
1 small carrot
1 stalk green onion
Cilantro (or your herb of choice)
1 garlic clove
Olive oil, apple cider vinegar, lemon, s&p

Chop all of the fresh veggies and top with oil, vinegar, lemon, and s&p to taste. 



Cinnamony-Coconutty-Peanut Butter

Sometimes it is the snacks that are the hardest. Especially here in Croatia, my go-to hummus dip is nowhere to be found. This delicious snack can double as a yummy dessert too!

Process:

Mix 1 heaping spoonful of peanut butter with 1 tbs water. Use a fork to stir until you reach your desired texture. Add a tsp of cinnamon and a tbs of shredded coconut. Stir and enjoy with half a green apple.

From Spain to Croatia!

My lovely, wonderful, energetic, mother, Lori, made the long trip to come see me!!!!!!!!  To greet her I made the trek to the airport via the metro. This was my first time using the metro solo and I am proud to say it went flawless.  Luckily, I found her and her friend, Leslie, with ease. Due to the amount of luggage these ladies brought, we had planned to take a cab back to our flat.  Well, the first cab to pull up got out, looked at the amount of luggage, and flat out said “NO”!  We eventually found this young, vibrant, cab driver that was very nice and turned a 17-euro ride to a 40-euro ride… Jennison usually handles the cab drivers… lesson learned on my part- sorry mom.  That night we all went out to dinner and my mom was able to meet all of our Spanish friends.  We only had about three days left in Valencia so we toured what we could, bought matching Valencia soccer jackets, (my mom is cool like that) and then it was off to Croatia!

Planes, trains, buses and automobiles were needed to get us to Croatia.  My mom, Leslie, and I flew to Munich, Germany where we met up with Jennison and Brynn.  Munich was amazing. We took this awesome bike tour of the city that not only gave us history information, but also took us to a BEER-GARDEN!  Unfortunately, the temperature was in the 30s and we froze our you-know-whats-off.  My mom had laughed and said there was absolutely no way she was riding a bike in that weather, so after the bike tour we met up with her at the Hofbräuhaus.  The Hofbräuhaus is this gigantic restaurant/beer-garden, where you can order a liter of beer, served by ladies in lederhosen.  I could have spent all day in there.  From Munich it was off to Innsbruck, Austria.

Innsbruck, Austria is one of the most beautiful places I have ever seen. Innsbruck was not a very large city, it had amazing food such as a Wiener Schnitzel.  Wiener Schnitzel however, means "breaded veal cutlet, Vienna style" (not a hot dog as I thought due to the American fast food chain). Traditional Wiener Schnitzel is a thin cutlet of veal coated in flour, egg, and breading, which is then cooked in oil and butter until crispy. It’s delicious.  From Innsbruck we took a train to Trento, Italy.  Trento was nice, but it was my mom’s heart’s desire to see Venice.


My mom and I traveled by ourselves to Venice, where I believe is now her favorite place on Earth.  It was one of the most enjoyable experiences I have shared with her.  We got off the train, checked out the river, boats, and cool bridges.  My goal was to get her to St. Marks Square.  We stopped at this cute café for coffee and ordered some chocolate treats.  There was a slight drizzle of rain, but I think it only added to the magical feeling of Venice.  We roamed the tiny streets until we made it to St. Marks,  here we took some awesome photos together and I will remember that moment with her for the rest of my life.  We then ate a two-hour lunch that could of fed four people at this little hidden gem of a restaurant.

A few trains and bus rides later, we went from Trento, to Zagreb, to Split, to Pisak, where Jennison and I will be living for the next two months.  My mom and Leslie stayed in Split, so we met them for dinner.  My mom asked the hotel for a “local, mom and pop” restaurant and that is what we got!  The hotel made us a reservation and said that was the only way you could get a table.  The restaurant consisted of only five tables and the server was the son of the owner, who was also the chef, awesome!  A plate of whole uncooked fish was brought out to us and we choose which ones we wanted grilled up, Amberjack and Sea Bass it was! I am so happy my mom was able to make it out here. It was her first trip to Europe and I am so glad I was able to be a part of it.

From one beautiful country to another... We may just be the most blessed people in the world!

Brian's mom, Lori, and her friend, Leslie, joined us in Spain for our last few days in Valencia and came along with us on our adventure as we traveled across Europe to our next home, Croatia! We had a great time showing them around "our city" and introducing her to our new, Spanish friends. It was so nice to be able to show someone some of the many reasons we love Spain and loved living in Valencia. 

We left Spain and headed towards one of my favorite cities in the world- Munich! I have always wanted to take Brian here and it was extra special because Brynn and I had traveled to Munich together about 9 years ago! We took the same bike tour, with Mike's Bike Tours, as we had taken our first time in this gorgeous town. After the bike tour we grabbed some beers at the Hofbräuhaus and sat amongst the many tourists and locals as they chugged down liters of beer and ate traditional greasy, German food. Unfortunately I was sick with the flu on our one night here so I called it an early night while Brynn and Brian went out for some more beers with our awesome tour guide. 

The next morning we took the train to Innsbruck, an adorable Austrian town, with some of the most amazing scenery I have ever seen. Every turn and every corner was more and more beautiful. We spent our time here walking around, enjoying the beautiful views and each other's company. We even found a Mexican food restaurant! The black beans in our fajitas may have been a highlight of this trip...

From Innsbruck we went to Trento, Italy. This was a super relaxing leg of the trip for me. Brian and his mom took a day trip to Venice so Brynn and I spent the day together. We slept in and stayed in our pajamas until about 1:00 pm, grabbed coffee and pizza in town, and spent the day just roaming around the city. I even partook in Italy's must-do tradition of sampling gelato! It was worth it...

Our longest travel day was getting from Italy to Croatia. We took a train out of Trento first thing in the morning towards Venice. From here, we took a bus to somewhere in Austria... and then hopped on another train to Zagreb, Croatia. What a great feeling it was to finally reach the country that we would be living in for the next two months! Besides almost leaving one of Brian's bags on the train... Zagreb was an uneventful, short pit-stop. 

We left the next morning and took a five hour bus ride south towards Split, a popular tourist destination on the coast. The bus ride through the Croatian countryside and mountains was beautiful. These hours on the road ended up having a huge impact on me. It was the first time I felt completely lost with the language, having no way to communicate and it felt impossible to understand. I could feel, physically, driving further and further away from Spain. Spain, a place we had made our home, with amazing memories and the comfort of friends that we loved. As we continued to drive, I felt physically, and metaphorically distanced from everyone, and everything I knew. I remember thinking, "What are we getting ourselves into...? Was choosing Croatia a mistake?" I am happy to report, this was not a mistake. Instead, it was one of the best decisions we could have ever made!

Lori's last nights in Europe were our first nights in Croatia. We had a great time exploring the old town of Split, eating a traditional Croatian meal, and spending quality time together. It was such an amazing experience to share with family and we are so lucky Lori decided to make the trip out here to visit!

We are currently living in a small town on the Dalmatian Coast of Croatia called Pisak. No traffic, no city lights, no crowds. Just beautiful views and perfect company. Want to hear more? Stay tuned for our adventures in and around Pisak...until tomorrow!

Water, water, everywhere!

One of the most important aspects of staying healthy while traveling is making sure you stay hydrated. You are constantly on the move, out in the elements, spending the night in various hostels and campsites, and cannot always depend on the tap as a clean source of water. If only you could have fit your BRITA Pitcher in your backpack...

A friend of mine had suggested to me that I buy a filtering water bottle before our trip. As a young couple, we are looking to save money wherever we can. Having a resusable water bottle that actually filters the water as you drink, prevents us from needing to buy expensive, plastic, water bottles all over Europe. Now, we can fill up our water all throughout the day and reduce the amount of waste we leave behind! It is a great feeling to know that no matter what, the water we are drinking is clean. 

This water bottle has been a lifesaver during our trip to Europe, but I am also looking forward to using it while at home too! It's perfect for road-trips, long days out-and-about running errands, filling up at the yoga studio, etc.

Valencia... Where the heart is...

Adios  Hasta Luego, Valencia!

It is possible that the delay of our blog updates is because of this very one...coming to terms with leaving Valencia and finding a way to put it all into words feels to be a project difficult for the mind, and almost impossible for the heart.

Valencia was chosen at random. About 8 months ago, my friend Katie and I, dreamed up a plan to live in Spain for 6 months. Valencia was chosen because it was near the beach, was a big city with an adorable historic old town, and had good weather. There was no other reason at the time. Little did I know, there were 6 more reasons... Santiago, TiMi, Virginia, Emilio, Victor, and Javi...

As I prepared to leave for Spain, I remember having a conversation with a few people about the journey that was ahead of us. One comment I made has stuck with me... "It is crazy to think that there are people we are about to meet that we have lived our whole lives without ever knowing. And after this adventure, we will have new friendships that we may not be able to imagine our lives without." This could not be more true. 

If you have been following along the blog or Facebook, you will know a little bit about the friends we met in Valencia. We met four of the guys while watching the SuperBowl at the only American pub in town- Portland Ale House. As soon as we met these guys, we knew it was going to be a fun night. We exchanged contact information and as we walked away from them that night, I felt in my heart that we would see them again. After reminiscing on this night, the guys said that they felt the same way that night, "This cannot be a one night thing. We need to make an effort to be friends with these people". And an effort they made!

We spent the next two months chatting on Facebook, spending fun nights at the fútbol matches or dancing in town, watching "The Bachelor" at our flat, cooking them American dinners, and sharing in traditional Spanish experiences with them. Over the course of two months, we got to know each other extremely well and developed deep, lasting friendships. People have asked, "what makes these guys so special?" I have no answer except, their hearts. Their open, accepting, sincere, genuine, fun-loving, hearts. It is not often you meet people who make you laugh until your face hurts and who you feel safe enough with, to let them hold you, when you cry.

Our last days in Valencia were bittersweet, but mostly sweet. Valencia has a yearly festival, Las Fallas, which is a crazy party for most of the month of March. Every day at 2:00 pm thousands of people pack the main Plaza Ayuntamiento (Town Hall Square) to listen and watch "Mascletà"- about 5 minutes of constant, crazy explosions. You can't hear a thing, the explosions bounce off the buildings, making your entire body shake, and the whole square is filled with smoke- it seriously looks and feels like a war zone. The town tripples in population, from about 1 million to 3 million people during Las Fallas. 3 million people- dancing in the streets, setting off fireworks wherever they please, eating, drinking, and celebrating life. Every night there were HUGE firework shows all over the city- fireworks like you have never seen the likes of in the US! Needless to say, after a couple weeks of this, we had enough of the constant window-shaking, sleepless nights... 
Throughout the month of March, these amazing floats made out of styrofoam are set up throughout the city. They are truly incredible. On the final night of Fallas, all of the floats are set on fire. The whole city goes up in flames! Did I mention the Spanish are crazy??? We were so lucky to have planned our trip overlapping with this crazy festival!

Our Spanish friends planned an amazing "last day in Spain" for us. They surprised us and took us to some of their favorite places near Valencia. We spent this day looking for seashells, flying kites at the lake, and eating Easter Monkeys (Monos de Pascua), a traditional Spanish treat during the Easter season. Later that evening, we went back to good ol' Portland Ale House where it all began. We sat around sharing our favorite memories of the last couple months, laughing at our first impressions of one another, and planning our next trips to see each other again. We ended the night at a local disco, dancing to our favorite songs, songs that will forever remind me of this amazing time in Spain. 

The hugs and tears at the train station leave me with a heavy heart. But, as we stepped onto the train and looked back at our friends, I will forever remember the smiles on their faces as they waved goodbye, and the knowing look in their eyes that this was just the beginning...

From Portugal to France to Ireland!

The last month and a half or so has been packed to the brim with amazing trips around Spain, Portugal, France, and Ireland. As we sit in our new apartment on the Dalmatian Coast of Croatia, we'd like to take you on a tour of the many fabulous places we've been blessed to visit.

Portugal:

I have to say Portugal is my new favorite country!  We first stayed in Porto then last minute decided we had to go to Lisbon because it would be foolish not to.  Thank goodness we did!  I absolutely loved Porto, the city was beautiful, the people were VERY nice and have I mentioned Port wine comes from Porto?  So, Port wine is like Tequila where it is only truly Port wine if it comes from a certain region   Well, I had never been a fan of Port wine, I only knew it as a dessert wine.  We visited a winery, Krohns Winery, which deserves a shout out because it had FREE tastings!!! I walked out with my own bottle to bring back home! In addition, we visited the café where the author of the Harry Potter books was inspired.  Portugal also has the best hostels of any country I have been to so far.  On to Lisbon…
            I would say Porto was a more relaxing, quiet town, where Lisbon is the more upbeat city with a popping nightlife.  Lisbon was just as beautiful, had great shopping, and by far is home of the nicest hostel (this still stands as the best after being to Ireland, France and Germany, which I will discuss later) we have been to.  Lisbon had this huge outdoor flea market that had all these amazing old artifacts, Jennison could have spend the entire day there.  We ate at this incredible restaurant with a line out the door and packed as many people as it could into it.  We sat next to this cute married couple with their young son.  They were super nice and talked our ears off for about 2 hours!  The food was delicious and came recommended from the guy working at the hostel.  Lisbon is all hills, making walking quite the workout!

France:

Before visiting France I was told about how rude the French can be and to make sure not to say you are American and even avoid speaking English.  We didn’t visit Paris, and stayed more towards the southern region.  I’m guessing since we were in smaller towns and pretty much spoke Spanish the whole time, we were treated better than expected. The highlight of France for me was Biarritz.  This city was gorgeous; it was a beach town so it had a little feeling of good ol’ San Diego.  The beach, cliffs, and food give this city two thumbs up.  I had some of the best, freshest, seafood I have had in Europe.

Ireland:

Top of the morning to you! Haha!  Ireland, what a country!!!  Let’s start with how I had to operate a stick shift vehicle from the right side (shotgun side) with my left hand while driving on the left side (wrong side) of the road.  I can proudly say we never stalled, hit anyone, or anything!  Most streets are one lane and my trusty passengers did have to yell “left side” every now and then.  I think the hardest/funniest part was remembering to stop walking to the new shotgun side of the car to get in.  I would just open the door for the ladies like a gentleman…heehee, I think they were on to me though.  Driving all over Ireland was one of the items on Jennison’s bucket list and I cannot thank her enough for that and am so lucky to have been able to experience it with her.  The drive is so beautiful, this only added to the challenges of driving!  We drove around the Ring of Kerry, which I highly recommend.  We visited the Cliffs of Mohr, which literally looks like you are standing at the edge of the world.  We also visited the Guinness factory in Dublin, which is a must.  I love Guinness!  We stayed at a B&B on a farm in some tiny town and upon arrival this young girl helped get us situated.  She was very friendly and kept telling horrible jokes that she thought were hilarious. We later ran into her at the only bar in town where she informed us she was two bottles of wine deep when she met us, haha!  Oh and her mom who ran the B&B was an identical twin to Robin Williams in Mrs. Doubtfire.  Jennison kept trying to video tape her, haha! 

After Ireland, we spent our last days in Valencia and then set out on a week long trip towards Croatia!

First stop: Portugal!

About 7 years ago, I dubbed Portugal as one of my favorite countries in the world and vowed to return. As we packed our bags in Valencia and jumped on the train heading west, I couldn't help but to feel butterflies. I was going back! 
Brian and I traveled first to Salamanca, Spain with Brynn and her boyfriend, Caleb. We stopped in this cute college town for a night on our way to Porto, Portugal. From here, Brian and I had one of our favorite date nights thus far. We randomly selected a city on the map of Spain and hopped on a train headed towards Medina del Campo, Spain. As soon as we arrived in the city, we found a city map, headed towards the main plaza, and booked a room with a balcony overlooking the daily hustle and bustle of this small, Spanish town. That afternoon we visited an amazing castle and found delicious Chinese food for dinner. We couldn't help but ask each other, "Is this real life?"
The next day we took a bus and drove through the Spanish and Portuguese countryside, arriving in Porto late afternoon. Ahhhh, Portugal! It was just as I had remembered. The people are some of the kindest, most generous people I have ever met- always greeting you with a smile and all were incredibly eager to accommodate my vegan diet. Thank goodness for the local soup, Caldo Verde, made with my favorite...kale! We spent the next two days exploring Porto on a walking tour and we even took ourselves on our own tour of the many wine houses that store and offer tastings of... you guessed it... Port wines! 
From Porto, we took the train south towards Lisbon. Lisbon reminds me so much of San Francisco- the hills, trolley cars, culture, art, hippies... I LOVE THIS CITY!! My favorite memory of our time in Lisbon was eating at a local restaurant, filled with locals and tourists alike. The restaurant was incredibly busy when we arrived and you could watch the chefs preparing the meals through the front window. After about 30 minutes we were sat at a shared table, next to a local Portuguese family. We had the most amazing night chatting with this family about American politics, Portuguese culture, and the differences between living in America and Europe. Our night was filled with genuine laughter as well as deep, thought-provoking conversations with people who were perfect strangers only moments before. I love how open Europeans are and how traveling helps to bring this out in Americans. Unfortunately, our camera battery died while in Porto, so we don't have any photos of our adventures in Lisbon...

Although we were sad to leave Portugal, we knew we had an amazing trip on the horizon...France!

Having traveled to France twice before, I had fond memories of the country itself, but remembered feeling a bit off-put by the French people. As I stepped off the train in Narbonne, France I was shocked as some sort of dirt or dust was blowing in my face. I turned around to see if Brian felt the same thing and noticed he was looking up towards the sky with a smile on his face. "It's snowing!" It was such a beautiful sight, but not the best timing as we were arriving late at night to this small town, without a place to stay... We found a restaurant that was open late that night and were pleasantly surprised by the kindness of its workers. One man literally walked us down the street (in the snow) to show us to a nice, but affordable, hotel. We arrived at the hotel and found we were the only guests that evening. The owner showed us to our rooms and had a hot meal and wine waiting for us downstairs by the time we were unpacked. My impression of the French people was forever changed. The rest of the trip was just as beautiful.
We headed to Carcassonne to see the famous medieval castle, which was amazing! We went from there to Bordeaux for one night and then headed to beautiful Biarritz, located on the Bay of Biscay. What a pleasant surprise! This was a place Caleb had "heard was beautiful" so we decided to take our chances and check it out. We found a hotel with a view of the gorgeous sea and spent the afternoon and evening on the coast, watching the sunset and eating delicious food. Once again, France made a lasting impression.

After a few days of relaxation and time to recharge in Valencia, Brian, Brynn, and I set out for a week-long trip to Ireland. 

We spent our first two nights in Dublin, exploring the city, marveling at the amazing variety of restaurants and cuisine (we ate Mexican food, Irish food, Asian food...). We took a tour of the Guinness factory and even learned how to pour the "perfect pint". We rented a car out of Dublin and spent the rest of the week picking random places on the map and driving through the beautiful countryside of Ireland. What a beautiful experience this was! We met some amazing people, stayed in adorable bed and breakfasts, and saw sights that made me certain, Earth is the most incredible planet. One of the highlights of our trip was staying on a dairy farm in Bantry Bay, which was owned by a woman that I swear was Mrs. Doubtfire. Another would have to be driving around the Ring of Kerry (almost twice due to one wrong turn...). Lastly, watching Brian drive a stick-shift, with his left hand, on the right side of the car, on the the left side of the road... PRICELESS, and impressive!

Again, I cannot believe our life. I am so thankful for a husband that allowed me to talk him into this crazy adventure.

Interesting fact: The little door you see above Brian's head is the entrance that men use to crawl inside to clean the barrels! It can only be men, because most women's hips are too wide to fit through.
